2. Sub Sandwiches 

Another easy meal. Perhaps this one's even better than breakfast burritos because it doesn't require reheating. I think you know the drill. You get your bread, cut it open. Throw down some lettuce, tomato, cucumber, turkey, cheese, mayo - whatever ingredients you like. Wrap it in tin foil or plastic wrap. Store in fridge. Grab and go when you're ready to hit the road.

3. Salad

Another excellent prep-ahead camping meal is salad. When you think camping, your brain might not jump to salad. You might think hotdogs, hamburgers, marshmallows. But salad is where it's at. Like subs, salads require no reheating. They can be kept cool in a cooler, and can be easily stored in Tupperware. Plus they're healthy. Unless you start adding a bunch of unhealthy stuff to your salad, like bacon bits, and ranch dressing and croutons and fried chicken and all the stuff you can get in those massive deli salads that taste delicious but are probably about as healthy as a Big Mac.

4. Trail Mix / Nuts

Okay, this is more a snack than a full meal. But it's a darn good one when it comes to camping. Get yourself a plastic bag. Throw in a handful of cashews. Now throw in a handful of peanuts. Add a dash of M&M's. Toss some raisins in there. Maybe some of that dried fruit. Shake it all around and you've got yourself a tasty trail mix that you can munch on the road or on a hike.

5. Roast 

Prepare a roast for the road! Get yourself a rotisserie oven. Impale a large piece of beef on there and spin it around for a few hours and you've got yourself a succulent roast. Remove the roast from the spit. Let it cool down and then carve it into thin slices, to be eaten as a snack or on bread. If you've got a pet dog, he will probably come begging for a piece. Go ahead and give him a piece. You know you can't withstand those adorable puppy eyes.
